Greek Yogurt

Greek yogurt is such a simple and yummy option for breakfast or a snack! Make it even better by sprinkling fruit and granola generously over it.
Ingredients
- 1 gallon raw milk
- 1/2 c. plain Greek yogurt
Directions
- Pour a gallon of milk into a large pot.
- Heat the milk on medium until it reaches 205 degrees, stirring occasionally.
- Remove from the burner and let it cool until it reaches 95 degrees. This normally takes 2+ hours, but you can speed up this process by placing the pot of milk in cold water.
- Stir in the plain Greek yogurt.
- Place the lid on the pot and place in the oven with the light ON (don't forget to turn on the light or you'll be very disappointed in the morning!).
- Let it set overnight. It should be thick and set up by morning.
- Optional step for thicker yogurt. Strain the yogurt by lining a colander with a paint strainer bag or a fine cheesecloth till it reaches your desired thickness.
- Remember to save out a 1/2 c. of the finished yogurt to use as the starter for your next batch!
