Carrot Cake
A delicious flourless cake that will brighten your day! A great recipe when you are flooded with eggs.

Ingredients

  • 2 c. coconut butter
  • 1/4 c. honey
  • 1 c. carrots, finely shredded
  • 1 T. cinnamon
  • 1/2 c. raisins
  • 1/2 c. shredded coconut
  • 1 t. salt
  • 1 1/2 t. baking soda
  • 1 t. vanilla
  • 10 pastured eggs
  • For frosting:
  • 2 c. cultured cream
  • 2 T. honey
  • 1 t. vanilla
  • 1 t. lemon zest
  • pinch of salt

Directions

  1. Place the jar of coconut butter in a pan of water and heat until smooth.
  2. Blend together the coconut butter and honey on low speed.
  3. Add the remaining ingredients, adding eggs last.
  4. Mix well.
  5. Pour into a greased 9x13 pan.
  6. Bake at 300 degrees for 40 minutes. 
  7. Don't overbake! It's better slightly underdone.
  8. For frosting:
  9. Gently mix all the ingredients together.
  10. Spread evenly over the cake or place a dollop on each slice.
