Carrot Cake

A delicious flourless cake that will brighten your day! A great recipe when you are flooded with eggs.
Ingredients
- 2 c. coconut butter
- 1/4 c. honey
- 1 c. carrots, finely shredded
- 1 T. cinnamon
- 1/2 c. raisins
- 1/2 c. shredded coconut
- 1 t. salt
- 1 1/2 t. baking soda
- 1 t. vanilla
- 10 pastured eggs
- For frosting:
- 2 c. cultured cream
- 2 T. honey
- 1 t. vanilla
- 1 t. lemon zest
- pinch of salt
Directions
- Place the jar of coconut butter in a pan of water and heat until smooth.
- Blend together the coconut butter and honey on low speed.
- Add the remaining ingredients, adding eggs last.
- Mix well.
- Pour into a greased 9x13 pan.
- Bake at 300 degrees for 40 minutes.
- Don't overbake! It's better slightly underdone.
- For frosting:
- Gently mix all the ingredients together.
- Spread evenly over the cake or place a dollop on each slice.
